ok, more 'Stupid Bikebuilding' questions...
What's the deal with these Center Lock style of disc rotors by the almighty "S"? Is the Center Lock style a less popular feature, to be replaced by the bolt-on style? Are they compatible with, say, Avid calipers or others? Or are you forced to go only with Shimannnnnno's brake series? The first thing I see is to install the beggars you need yet another specialized tool.
Seems to me that the more 'usual' bolt-on rotor style is lighter, easier to service, and just looks better.
The reason I ask this, is that while wheelset shopping, I came across one using the Deore LX M585 hubs. I'm gonna eventually try my hand at fudging on a set of disc brakes, but in the meantime I'd like to get a wheelset with both a rim brake and disc option so I can run Vbrakes first...

did some "pee eye" work and found this little item for converting Center Locks to 6 bolt IS;

Better make sure to use the Loctite on that bolt...is this a viable workaround? :-/

I don't think the adapter is such a great idea. Since I really just want to run Avid discs on the 857 sometime in the future, why not just get the bolt on hub type in the first place? Messing around with adapters just sounds like hassle. What I might save on a discounted Center Lock wheelset might not be worth the grief.
