depends -
you probably shouldn't, pending riding style, front fork length, amount of sag you run in a shock for firmness or plush etc., head angle you like - - -
go much more than 8.5" - you could go longer, but i'm not certain anyone here would think pass it along as a great idea for the long run. An 8.75" shock may work if someone were really tall and ran a fork in the extended 5+" regularly.

What limits the max itoi shock length on my evo/4000 frame is the rear swingarm striking on the front derailleur stub.
You could probably get away cutting a piece of this stub and sticking a 9 or 9.5" shock.
But as OP says, you would need a very tall front fork, and your bottom bracket may end up being too high.
For general trail ridding the 5.4" of rear wheel travel provided by a 2" stroke shock is Excellent!
For more agressive freeriding/downhilling you can get a 2.5" - stroke shock ,8.5" itoi, which will yield 6.75" of rear wheel travel
