What is the best fork for an 856?
Or what is the best travel on a fork for an 856?
Also what is the amount of travel for the rear on an 856?

I believe the rear travel on an 856 is about 80mm - give or take a bit. The original Girven fork was designed to have 63mm (about 2.5") of travel, but that's not very much. I'd recommend using an 80mm (about 3"). Most people tend to use 80mm forks. If you go much taller than that, you'll end up altering the geometry of the bike and it's won't perform the way it was meant to.

I think you are right about the rear being 80mm.
And I think I will go 80mm in the front so I wont throw off the geometry.
