I used to have one on my old Phantom but I never used Co2 with it. I plan on using a 3.5oz and I was wondering it actually helps with showing how much Co2 is left in the tank?

CO2 pressure falls too rapidly to get more than a last second reading on your pressure.  It's not like a HPA tank where you can see it's 1/2 or 1/4 full prior to a game.  The gauge will remain constant until your last usable shot and then drop to about 400psi.  Whether the tank has 200 shots or 2 shots left in it the pressure will read the same.

That's about right. A guage is just something with a little more bling than a plain old plug to fill any extra holes in the system.

I have one but never remember to use it. And it doesn't really work as stated above.

The gauge is simply the device used to plug the hole left over after you bob the valve.  Some people will swear up and down that the use them to see if the pressure has changed from their last fill due to the weather changing or that they use it when the "tech" their phantom.  Personally, that's what they sell chrono's for!!!!
